In those days, making a curry entailed almost a day's work. You needed to slice garlic and shallots before pounding them with a mortar and pestle. Dried chillies needed to be reconstituted in boiling water before being pounded. The spices needed to be carefully washed, dried and roasted. Next, you'd need to grind these spices. You'll need to engage in this back-breaking and tedious work before you'd even start cooking the curry. And finally, how do you know how much of ingredients to add? Cooks in those days never measured their ingredients; they'd throw in a pinch of this or a handful of that. All of which made getting a proper recipe almost hard, if not impossible!

All you need to do is pour the sauce into a pot, add water and bring to a boil. Next, add chicken, beef or seafood. Simmer for 10 to 20 minutes before adding a good measure of coconut milk or fresh milk. Simmer for another few minutes until oil rises to the surface. Voila! Your curry is now ready to be served.
